Amateur Cooking Courses

The Fonte Giusta Cooking School has the mission of transmitting the culture of Tuscan and Italian food and wine.

A few steps from Piazza del Campo in a historic building in Via Camollia we organize daily theoretical and practical food and wine tours lasting about 3 hours with dinner.

All courses will be held by a staff of professionals with many years of experience certified in Italy and abroad.

Chef Executive Giuseppe Chiarelli (for all Pino) owner of the Restaurant Trattoria Fonte Giusta is the heart of the school, will convey all his passion, experience and love for food.

Our raw materials are supplied by selected suppliers and are of high quality under the brands Igp, Dop, Doc, Docg and Bio.

All courses will be held in Italian and English. Monday to Friday 4:30pm to 7:30om. From 7.30pm: dinner at the end of the course.

On Saturdays dinner tasting with the partnership of wineries.

Daily menu:

  • Monday: Crostini Toscani, salumi e formaggi Toscani, Ribollita, Pici al cinghiale, Scottiglia di Pollo Bio del Val D’Arno, patata viola al cartoccio, Tiramisù € 80.00 p.p
  • Tuesday: Panzanella Toscana, Sformatino di Pecorino di Pienza, Pici cacio e pepe, Ravioli con melanzane al pomodoro, Brasato al Chianti, patate al forno, Cantucci e Vin Santo. € 80.00 p.p
  • Wednesday: Salumi di Cinta Senese, Terrina di pollo BIO, Pappa al pomodoro, Pappardelle al ragù Toscano, Stracotto di Cinghiale, sformatino di cavolo nero, Panforte € 80.00 p.p
  • Thursday: Carpaccio di chianina, Chianina scottata al rosmarino e tartufo, ravioli maremmani con fonduta di pecorino di Pienza e tartufo, Fiorentina alla brace. Dessert € 95.00 p.p
  • Friday: Tentacoli di polpo su Cipolla rossa di Certaldo, sedano e patate, Tartare di Chianina, Gnocchi di patate viola con cozze e verdure croccanti, Pici al ragù bianco d’anatra, Filetto di Cinta Senese alla vernaccia di San Gimignano e insalata di fagioli cannellini, Galato al Vin Santo € 95.00 p.p

Theoretical part:

  • Overview of raw materials;
  • Menu composition;
  • Pairing with the right wine.

 

Practical Part:

  • Preparation of appetizers that will vary according to the daily menu;
  • Fresh pasta prepared by you with their sauces;
  • Manipulate correctly the meat and/or fish, their cooking and the right accompaniment;
  • Dessert of the day.

At the end of the course... all at the table where will be served the dishes you prepared with wines in pairing.
