Courses for Pizza Chefs

The course for pizza chefs is for those who would like to make pizza—recently nominated by Italy as world heritage—into a profession. You will learn how to understand the difference between the various types of flour and how to choose the right one based on what you would like to prepare; the principles of leavening; how to select the ingredients and prepare the toppings; how to make and handle the dough, as well as the methods of baking for use in a traditional wood oven or in an electric one.

The course consists of N hours of training, divided between theoretical and practical lessons, for a maximum of N students per course.

Course information

  • Duration: 16 lessons for a total of 48 hours, with sessions of 3 hours per lesson
  • Participants: maximum 8 people per class
